Following our easy Christmas cake recipe, your celebration of the holiday season will surely be fun and delightful.

Recipe-

Ingredients Required:

  • 300 gms plain flour
  • 6 large eggs
  • 300 gms soft brown sugar
  • 300 gms slightly softened butter
  • Pinch of salt
  • ½ tsp cinnamon powder
  • 500 gms currants
  • ½ tsp mixed spice
  • ½ lemon (zested)
  • 3 tsp brandy
  • ½ tsp freshly ground nutmeg
  • 250 gms raisins
  • 250 gms golden raisins
  • 100 gms candied peel (finely chopped)
  • 1 cup glace cherries

Steps:

  • Gather all the ingredients that are important for the traditional Christmas cake recipe. Heat the oven to 300F.
  • Grease and line a 9-inch cake tin with a double layer of parchment or greaseproof paper. Tie brown paper or newspaper around the outside of the tin to prevent the cake from burning on the outside.
  • In a large bowl, mix the currants, raisins, sultanas, peel, and cherries along with the flour, salt, and spices.
  • In another bowl, mix the butter with the sugar until light and fluffy. Add the lemon zest. Add the beaten egg to the butter mixture little at a time and beat well after each addition.
  • Now carefully add half the flour and fruit into the egg and butter mixture. Once incorporated, repeat the process with the remaining flour and fruit. In the end, add the brandy.
  • Add the mixture into the prepared cake tin and make sure there are no air pockets. Smooth the surface with the back of a spoon.
  • Put the cake in the oven and bake for 4 ½ hours. During the baking time, try and avoid opening the oven door as that may cause the cake to collapse.
  • After 4 ½ hours, check if the cake is properly baked. It should be deep brown all over. You can insert a skewer into the center of the cake and if it comes out clean that means the cake is properly baked and you should remove it from the oven.
  • Let the cake cool on a wire rack for an hour, then remove from the tin and leave to cool completely. Once cooled, prick the surface of the cake with a fine metal skewer and slowly pour over 2 to 3 tablespoons brandy.
  • Store the cake wrapped in greaseproof or parchment paper in an airtight tin until ready or needed to serve.
