  • 250g flour
  • 250g unsalted butter
  • 250g caster sugar
  • 4 tablespoons milk
  • 4 medium eggs
  • Pinch of salt
  • 2 x 12-hole muffin tins properly lined with paper cases
Steps to Follow Step 1: Preheat the oven to 190°C Step 2: Pour batter into a bowl and beat until it softens. Then add flour, sugar, eggs, salt and milk and whisk until a smooth texture appears. Step 3: Scoop the batter using a spoon and pour equally into the cupcake paper cases. Step 4: Place the muffin tin in the oven to bake for 15- 18 mins at 190°C. Once baked, let the cupcake cool down on a wire rack. Step 5: Decorate the top of the cupcake with the frosting flavour, colour and style of your choice. Dark Chocolate Cupcakes Dark Chocolate Cupcakes ⏳ Total Time: 40 min prep+ cooling time 🍽 Serves: 12 cupcakes Required Ingredients
  • 185g of plain flour, sifted
  • 85g of unsalted butter
  • 170g of brown sugar
  • 2 large eggs
  • 250ml of semi-skimmed milk
  • 115g of dark chocolate (good quality)
  • 3-4 teaspoon of bicarbonate of soda
  • 3-4 teaspoon of baking powder
  • 1 teaspoon of vanilla extract
  • Pinch of salt
Steps to Follow Step 1: Preheat the oven to 180°C Step 2: Chop the dark chocolate into small pieces. Then melt it either in the microwave at short 30 sec intervals or in a heatproof bowl placed over a saucepan filled with water. Step 3: In a large bowl, beat the butter and sugar for a pale and smooth texture. In a small bowl, whisk only the egg yolks till they become light and fluffy and pour them into the first bowl. Then add the melted dark chocolate (should not be hot) and beat the entire mixture. Step 4: In a separate bowl, combine flour, soda, baking powder and salt. Also, make another mixture of milk and vanilla essence. Step 5: Add half the flour mixture and half of the milk into the chocolate bowl, beat well. Then add the remaining half of the flour and milk to beat again. Step 6: Take a clean bowl to whisk the egg white to achieve a soft peak and carefully fold into the entire mixture. Avoid beating it. Step 7: Pour the mixture into the cupcake cases and bake for 25 minutes at 180°C Step 8: Swirl the frosting onto the dark chocolate cupcake in whichever design you like.   • 125g caster sugar
  • 25ml strong espresso coffee
  • 125g unsalted butter
  • 2 medium eggs
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
Steps to Follow Step 1: Preheat the oven to 170°C & make the instant coffee as per instructions on the sachet. Step 2: Take a large bowl to beat the butter and sugar for a creamy and fluffy texture. Step 3: In a separate bowl, beat the eggs and vanilla extract. Slowly pour it into the main bowl, mixing it thoroughly. Step 4: Now pour in the cooled coffee and stir gently Step 5: Sift the flour into a fresh bowl and add the baking powder. Then fold it in the main bowl to form a sturdy batter. Step 6: Scope out the mixture and equally pour it into the cupcake cases. Bake the cupcakes for around 20 mins at 170°C. Step 7: Adorn the coffee cupcake with vanilla frosting and some coffee beans. Lemon Cupcakes Lemon Cupcakes ⏳ Total Time: 65 min prep+ cooling time 🍽 Serves: 12 cupcakes Required Ingredients

  • 115g unsalted butter
  • 150g golden caster sugar
  • 2 medium eggs
  • 80ml buttermilk
  • 4 tablespoon lemon curd
  • Zest of lemon
  • 2 tablespoon of fresh lemon juice
  • ¼ teaspoon baking powder
  • ½ teaspoon vanilla extract
Steps to Follow Step 1: Preheat oven to 160°C Step 2: Add the lemon juice and zest of one lemon to the buttermilk in a bowl. Step 3: Beat the butter and sugar in a new bowl until it’s fluffy and light in colour. Step 4: In a separate bowl, mix the flour and baking powder. Then add eggs one at a time and stir thoroughly. Step 5: Add the buttermilk mixture and vanilla extract into the flour mix bowl. Then add the butter and sugar into it and beat properly. Step 6: Scoop out the batter and carefully pour it into cupcake cases. Heat the oven at 160°C for 25 mins. Once baked, let it cool. Step 7: Once cooled, carve out a bit of the cupcake from the centre to fill it up with a teaspoon of lemon curd. Red Velvet Red Velvet ⏳ Total Time: 35 min prep+ cooling time 🍽 Serves: 12 cupcakes Required Ingredients

  • 60g unsalted butter
  • 10g cocoa powder
  • 150g caster sugar
  • 120ml buttermilk
  • 1 egg
  • ½ teaspoon vanilla extract
  • 1½ teaspoon white wine vinegar
  • ½ teaspoon bicarbonate of soda
  • ½ teaspoon salt
  • 20ml red food colouring
Steps to Follow Step 1: Preheat the oven at 170°C Step 2: Beat the butter and sugar on medium speed till they are light and fluffy. Then add the eggs while beating the batter at a high speed. Step 3: In a separate bowl, mix the cocoa powder, red food colouring and vanilla extract. Mix well till a thick, dark paste is formed. Add this to the main bowl until it is evenly combined. Step 4: Lower the speed of the mixer and pour half the buttermilk and half the flour. Mix well, then add the remaining halves and beat till a smooth and even texture. Step 5: Now add salt, soda and vinegar to the mixture. Beat until it is all properly mixed. Step 6: Spoon each mixture into the cupcake cases and bake for 20-25 mins at 170°C Now, that you are familiar with the entire baking process, it’s time to try your hand in the kitchen.
